This iconic Resort is situated between the renowned Great Barrier Reef and the
Daintree Rainforest in Tropical North Queensland. The resort comprises 295
guest rooms| suites and villas.

Department
Harrisons Restaurant by Spencer Patrick is a unique fine-dining restaurant
experience located within Sheraton Grand Mirage Resort Port Douglas. We are
currently seeking a Sous Chef to support our excellent team and to create
exceptional culinary experiences for our guests and local visitors. A strong
leader who has a great passion for developing talent and enjoys interaction
with people. The position reports directly to the Executive Chef.
Responsibilities will include:
•Developing and delivering outstanding culinary options to our guests using
the freshest local ingredients
•Assisting with the supervision| motivation and training and developing of
junior chefs
•Interacting with guests to share your knowledge and passion
•Flexible approach in adapting to guest requests
•Assist in the preparation of rosters| budgets| and standards operating
procedures
•Undertake and supervise daily food preparation in anticipation and response
of service requirements.
•Involvement in the general restaurant operation keeping up-to-date with
events within the broader hotel
The successful candidate will have:
•Previous experience as a Senior/ Sous Chef within a fine-dining environment /
hatted restaurant (essential).
•Trade qualified with strong HACCP knowledge
•A passion for food| keeping up-to-date with food trends with emphasis on new
and local produce.
•Experience with international cuisine and a drive to achieve excellence in
food quality through the culinary team.
•Possess excellent communication skills
•True desire to succeed in this profession
•Willing to work on rotating roster over a 7 day working week
•Foster an environment of highly motivated and skilled chefs
